Zesty Pollo Asado

Ingredients
- 3 lbs bone-in, skin-on chicken pieces (thighs and drumsticks work best)
- 3 tablespoons Carnesazo All-Purpose Seasoning
- 1/3 cup orange juice
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 3 cloves garlic, smashed
Instructions
In a large bowl, whisk together the Carnesazo seasoning, orange juice, lime juice, olive oil, oregano, and smashed garlic.
Add the chicken pieces to the bowl and toss to coat completely. Cover and refrigerate for at least 1 hour.
Preheat your grill to medium-high heat, setting up a two-zone fire (one side hot, one side cooler).
Place the chicken on the hot side of the grill, skin-side down. Cook for 3-4 minutes until the skin is crispy and golden.
Move the chicken to the cooler side of the grill, cover, and continue to cook for 15-20 minutes, turning occasionally, until the internal temperature reaches 165°F (74°C).
Let the chicken rest for 5 minutes before serving. Great with rice, beans, and warm tortillas.
